Corn is best when it's fresh picked. The moisture in it goes away quickly. Add in direct grilling and it can dry out in a snap. I prefer to leave on a few layers of husk, then soak in water for an hour or so. Shake off the water and grill over direct heat. You'll still get some nice char on the kernels from the sugars, but the moist husks help steam the corn and make it more tender.

Man that is one Big Roast.......

Last time I saw cuts that big they were running about, we live near an Ostrich farm does that count.
