Just a couple quick ones:


One of my favorite cuts of beef, Tri-Tip. I smoked it for a couple hours, then finished it on the grill to crisp up the outside.

A Mardi Gras classic, King Cake. I make a couple each year.

Last nights dinner... Ladies and Gentleman I present to you my famous Drunken Grilled Shrimp Tacos. Usually served with a mango slaw but I didnt have any cabbage.

Since it is Valentines Day, here is what I made for dessert

Sunday's cook, a 13.5 lb brisket and a 5.5 lb Rib Roast. Here are the burnt ends from the brisket and the rib roast. The rib roast was put in the fridge and sliced on the slicer today for sammiches.

I guess I should add the pictures from the BBQ cook off we entered back in September. The best finish we had was a fifth place in chicken out of 103 teams.
