Do these two waxes have any advantages or disadvantages over each other, and is there a good reason for getting both products ?

I would love to be able to help but sadly I have only ever used Nattys White so far. Give it a go and see what results you get, you have nothing to lose because whatever result you get it will still look amazing :) :)

To use Spray and Gloss as a rinse aid, is it simply spray onto a wet car and then hose it down ? And would adding a little water to Trim Restorer result in a shiny dash but not ridiculously shiny ? ( ie dull it down a little ? )
